WINEMAKER NOTES
An elegant wine of yellow-green color with expressive aromas of quince, apple and hazelnut notes intertwined with subtle hints of pineapple, coconut, and vanilla.
Soft, elegant, and creamy texture with a remarkable roundness and a long finish.
VINIFICATION
Bunch sorting table and berry sorting table. Cold maceration (premaceration) at 10°C (48-72 hours) before fermentation, that occurs in stainless steel tanks with individual temperature control system for 15 to 20 days.
The fermentation takes place with selected yeast at low temperatures. After primary fermentation, a proportion goes to French and American oak barrels for 3 months and a 10% does Malolactic. The final blend remains for 3 months in stainless steel before getting bottled.
FOOD PAIRING
Fest Chardonnay pairs well with sushi and shellfish, like langoustines, clams and mussels. It is also ideal with flaky white fish. The slight richness of the oak allows to go brilliantly well with the light fattiness of salmon.
